Improving Edible Cheese Coatings

DOBRA IDEA, in cooperation with CONCENTROL, continues to develop edible cheese coatings. The goal is to achieve coatings in various colors, allowing cheesemakers to produce ecologically clean cheeses in a wide range of shades. Colored coatings also help secure plant decorations (like in Alp Blossom–style cheeses), eliminating unwanted yellow spots between flower petals.
