Improving Edible Cheese Coatings
DOBRA IDEA, in cooperation with CONCENTROL, continues to develop edible cheese coatings. The goal is to achieve coatings in various colors, allowing cheesemakers to produce ecologically clean cheeses in a wide range of shades. Colored coatings also help secure plant decorations (like in Alp Blossom–style cheeses), eliminating unwanted yellow spots between flower petals.

New Production Technology for Taste Bases
DOBRA IDEA has developed and implemented a new production technology for taste blends used in semi-hard cheeses. The new method further reduces the already minimal risk of contamination by Clostridium spores. Additionally, the new packaging is much more convenient for transportation and storage.
