MILK-CARAMEL FLAVORS

When milk is heated for an extended time, lactose reacts with amino acids from proteins (Maillard reaction), forming melanoidins and sulfur compounds that give the milk a caramel-like note. This natural aroma is found in traditional Polish “Kajmak”, Norwegian “Brunost” cheese, Ukrainian “Ryazhenka” drink, and the classic Crème brûlée.

When adding plant-based ingredients to cheese curd, there is a potential unacceptable risk of contamination with Clostridium spores if no specific protective measures are applied.

The plant materials in our taste carriers undergo special processing to eliminate microorganisms, including spores of various Clostridium strains. However, even the most thorough treatment cannot fully guarantee the complete absence of spores. During cheese ripening, anaerobic conditions may develop, which can promote the activation of Clostridium spores.

For this reason, we strongly recommend the use of lysozyme when producing cheese with our taste carriers.
